Edwin continues to push the envelope in fermentation with this green apple co-ferment. In the past, we have carried coffees from Edwin fermented with hops and even chili peppers, so this coffee felt like the logical progression for us into the wild unknown.
This is a super fun coffee. The aroma is intense, and despite how it sounds, is really quite drinkable. The acidity is more mild than you'd expect and while still juicy and complimentary to the flavor profile, it's lacking the phosphoric punch that you may be accustomed to expect from co-ferments. This is a good thing for this coffee.
Yellow bourbon is the base varietal used, and Edwin uses the mossto (coffee cherry juice) infused with green apples to ferment the coffee.
