Sandra and her family operate their farm, Buena Esperanza, in Matagalpa Nicaragua where half of their land is virgin forest.
Mariana, the variety showcased here, is an F1 hybrid between IAPAR 59 and an Ethiopian landrace. While typically known for its fruit forward profile and rooibos tea flavor, I’ve found that Sandra’s example, grown at just 1200m, leans more heavily on the tea like flavors.
In the cup we taste a resemblance of iced tea with a twist of lemon. A sweet caramel after taste rounds out the profile.
