I cupped a table of Wilton's coffees during expo at Dayglow in Chicago with our friends Gio and Mia from Drip. It was a pleasure to get to meet Wilton and try so many fantastic coffees. This one was a standout to me on the table and practically fell into our lap when we met Patricia, who works with Wilton to bring some of his coffees to Michigan.
You've more than likely heard of Wilton's coffees before (nearly every specialty roaster has featured his coffees) and for good reason. Wilton is a processing expert, and everything he does is on another level.
This particular Yellow Bourbon lot is all about clarity. Lots of juicy tamarind and orange citrus, a mouth watering creamsicle flavor, and delicate florals like magnolia and white flowers. It's a special coffee, and I look forward to having more from him in the future.
