I was introduced to Sofia by Carlos from finca Siquem, one of the farms I visited while in Guatemala last year. The three of us spent some time together in Chicago during expo, and I knew I had to get her coffee on the menu after hearing her story and trying some of the samples she brought.
Sofia's family owns Hacienda la Fragua, or "the Forge", an active coffee farm that has been in the Sinisterra family since 1875. The farm sits at 1800m beneath the stunning Media Luna mountain near Nilo, Colombia.
The unique microclimate from the mountain paired with the elevation and traditional processing methods (equipment brought from London in the late 1800's is still in use) creates a delicious cup. A bright acidity full of complex citrus is accompanied by crisp red apple and a vanilla cookie sweetness.
A traditional washed coffee that hits all the marks, we look forward to working with Sofia more in the future.
