This washed Castillo comes from the Media Luna (half moon) plot on La Fragua, directly below the towering cliffs of the mountain that is shaped like its namesake. Castillo is prolific throughout Colombia, thanks in part to the coffee federations push to plant this reliable varietal for its disease resistance and production volume.
On La Fragua, where mountains and old forests provide abundant shade, the production volume is lower and the flavor more nuanced. The acidity is focused and sweetness more complex, with light citrus and sweet panela being the dominate flavors.
This coffee is nostalgic, harkening back to the early days of specialty coffee before the rat race for the exotic began. A daily drinker, by definition.
