This coffee was purchased directly from the farm, Capilla Del Rosario, in Medellín Colombia. I was first introduced to Jose’s coffees a year ago when Juan, who works for the farm, spent some time in Grand Rapids visiting family. We chatted coffee and sampled their various offerings.

This summer, Juan messaged me that his younger brother was going to be in town again and would drop off samples of a new process they had been working on. A process that involved soaking a washed coffee, still in parchment, in a broth of lactobacillus, mesophiles, and coconut concentrate.

This is then left to ferment for a set amount of time before being dried to the ideal moisture content.

 The results are stunning. Clean, juicy, and vibrantly sweet, this coffee drinks like our favorite washed coffees, but with a very obvious (and delicious) coconut flavor.
