Roasters notes:  Theres a lot to say about this coffee.  From varietal and producer to process, it is a stand out in every regard.  The Java varietal itself is quite rare in Colombia, believed to be of Ethiopian descent, it exhibits similarities to the more well known Gesha varietal. 

This one comes from El Vergel, a farm on the slopes of Mt. Ruiz in Fresno, run by Elias and Shady Bayter alongside their mother.  The Bayter brothers handle their own export / import, meaning they work directly with roasters rather than selling to co-ops and losing money to middlemen. This model has made their farm (and neighboring farms they have facilitated) sustainable, and able to hire more workers. 

In the cup, it’s an explosion of pineapple and starfruit.  I think yellow every time I sip this coffee.  Behind the juicy fruit notes is a sweet, candy like body, that fades into tropical floral notes like hibiscus.  It has it all, and the whole experience is absolutely mouth watering.  Grind a little finer, and feel free to reach out for more detailed brew help!
